Avocado Chocolate Pudding Recipe
serves 2
Ingredients
- 1 medium ripe avocado
- 1/4 cup cocoa powder
- 10 drops stevia
- 1/2 tsp vanilla extract
Directions:
- Cut the avocado in half, removing the pit. Use a sharp knife to separate the skin from the avocado flesh. Toss the skin and add the avocado flesh to a medium bowl.
- Use a fork to mash the avocado a little bit. Then add the cocoa powder, stevia, and vanilla extract.
- Use the fork to continue mixing and mashing the mixture until it resembles a pudding. If you want, you can also use an electric hand mixer to do the job.
Notes: If you find that it’s hard to mix your pudding and it’s looking a little dry, try streaming in some heavy cream to loosen it up. You can also try adding in a little bit of softened cream cheese.
