Diabetes-Friendly Apple & Spice Muffins Recipe

Apples are packed with fiber and are a great source of vitamin C. Add some cinnamon for a sweet and spicy kick!


  • 1 1/4 cup white all purpose flour
  • 1/2 cup cornmeal
  • 1/3 cup sugar
  • 1 tsp low sodium baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground ginger
  • 2 each large apples
  • 3/4 cup low fat buttermilk
  • 2 tbsp vegetable oil
  • 1 each Eggs, large, raw
  • 1 each cooking spray
  • 2 tsp sugar
  • 1/4 tsp ground cinnamon


  1. Preheat oven to 400 degrees F.
  2. Mix together flour, cornmeal, 1/3 cup sugar, baking powder, 1 teaspoon cinnamon, baking soda, salt, and ginger. Form a well in the middle of the mixture.
  3. Mix together apple, buttermilk, oil, and egg. Stir into the well of flour mixture to make a batter.
  4. Spoon batter into a muffin tin coated with cooking spray. Mix together the remaining 2 teaspoons of sugar and 1/4 teaspoon of cinnamon. Sprinkle on top of the muffins.
  5. Bake for 20 minutes or until lightly browned. Serve warm.
