Gluten-Free Banana Berry Scones Recipe

Serves: 10, with 2 cookies each

Ingredients

  • 3 large ripe bananas
  • 1 cups fresh strawberries
  • 1 cup fresh raspberries
  • 1 cups quinoa flakes
  • 1 cup cooked quinoa
  • 1 cup shredded, unsweetened coconut
  • 1 cup brown rice flour
  • 1/3 cup coconut sugar
  • 1 1/2 tablespoons ground chia seeds
  • 2 tablespoons hemp seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch sea salt

Directions

  • Pre-heat oven to 375°F. Blend bananas and strawberries in food processor until smooth.
  • Add to bowl and stir in remaining ingredients.
  • Drop into large rounds on cookie sheet lined with parchment paper (or greased with coconut oil).
  • Bake for 30 to 35 minutes, or until cookies are browned on the bottom and hold together.
