Noodles On The Go: Make Your Own Pho

Food 52 has been doing a great series lately about how to keep your midweek desk lunches pretty and delicious. We especially loved this modern, fresh take on Pho. We tried this in the Zliving office last week and absolutely loved it.  If you aren’t familiar with it, Pho is a tangy Vietnamese noodle soup. Essentially, it’s Cup-O’-Noodles, but leveled way up. 



Here’s their recipe:

1 teaspoon fresh ginger, finely chopped
1/2 red chile pepper, de-seeded and finely chopped
3 scallions
1/2 yellow pepper, sliced lengthwise into thin strips
2 handfuls spinach
2 ounces vermicelli rice noodles
1/2 chicken or vegetable stock cube (or generous pinch of salt)
1 lime, cut in half
1 handful fresh cilantro and basil

Instructions the Night Before:

Place ginger, chile pepper, scallion, yellow pepper, spinach leaves, rice noods, sock cube, cilantro and basil into large, heatproof jar with sealable lid.
Top off with lime and seal the jar.
 
To Serve at work: 
Unseal jar and set lime aside.
Pour boiling water into the jar until water just covers everything.
Use a fork to stir until the stock has disolved.
Reseal and shake a few times.
Garnish with Lime and Enjoy!
