Sweet Potato & Jicama Fries

  • 1 small sweet potato
  • 1 small jicama
  • 1/4 cup coconut oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon paprika


  • Preheat oven to 400 degrees, and line a baking sheet with parchment paper.
  • Peel and slice sweet potatoes. In a large bowl, mix potatoes, oil, salt and seasoning, stirring well to thoroughly coat the fries.
  • Arrange the fries on a baking sheet in a single layer (Optional: Sprinkle with Parmesan). Cook for 20-25 minutes, turning about halfway through. The fries are done when they are browned around the edges.
