Anti-Aging Birthday Cake

Ingredients

  • 1 2/3 cups pastry flour
  • 1 teaspoon baking powder
  • 1 tablespoon baking soda
  • 3 cups pureed dates (use baby food)
  • 1/2 cups pitted dates, chopped
  • 1 cup pineapple chunks in own juice, drained
  • 1 banana
  • 1 cup unsweetened applesauce
  • 1 cup raw beets, shredded
  • 1 cup carrots, shredded
  • 1/2 cup zucchini, shredded
  • 3 tablespoons cocoa powder
  • 1/2 cup dried cranberries
  • 1 cup chopped walnuts
  • 1 1/2 cups water
  • 2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350°F. Mix flour, baking powder and baking soda in a small bowl. Set aside.
  2. In blender or food processor, blend pureed dates, pineapple, banana and applesauce.
  3. In large bowl, mix chopped dates, beets, carrots, zucchini, cocoa powder, dried cranberries, walnuts, water, vanilla and flour mixture. Add the blended mixture and mix well. Spread in a 9 x 13-inch nonstick baking pan.
  4. Bake for 1 hour or until a toothpick inserted into the center comes out clean. Top with your favorite icing and enjoy!
