This is the very recipe JD Roth creates for Ryan Benson and his family in the show. And given that it takes approximately 10 minutes, costs less than $15, and can feed 5, you'll want to make it one of your go-to meals! Even better, this meal fits the whole food, plant-based diet that all participants of The Big Fat Truth follow — with some astounding results — and is an excellent way to try your hand at creatiing a plant-based meal yourself.

A tip straight from JD Roth: Use really ripe tomatoes for this recipe — they're the tastiest, and you want their juice to make a perfect sauce.

Ingredients:

  • 1 package brown rice pasta
  • 3 chopped ripe tomatoes 
  • 1 chopped onion
  • 8 - 12 shredded basil leaves
  • Premade or prepackaged black or green lentils
  • Veggie broth for sautéing 
  • Salt and pepper to taste

Instructions:

  1. Cook pasta according to package directions. 
  2. Heat a very small amount of broth (about 3 tbsps) in a pan. Add the chopped onion. Sauté and keep adding broth a few tablespoons at a time until the onion is soft and almost cooked all the way. 
  3. Add chopped tomato and cooked lentils. Mix until combined well. 
  4. Add shredded basil and toss until wilted. 
  5. Add salt and pepper to taste. 
  6. Serve lentil bolognese over pasta and enjoy.
