Couscous & Chickpeas

Ingredients

  • 1 teaspoon grass-fed butter or olive oil
  • 1 1/2 cups water or vegetable stock
  • Pinch of sea salt
  • 1 cup whole grain couscous
  • 1 cup chickpeas, cooked (can use canned)
  • 5-6 mint leaves, minced
  • 2 scallions, minced
  • 1 tablespoon parsley, minced

Directions

  1. Bring water, butter and salt to a boil in a pot over high heat.
  2. Add couscous, cover and turn off the heat. Let sit 5 minutes.
  3. Fluff couscous with a fork. Stir in chickpeas, mint, scallion and parsley.
