RECIPE: A Healthy, Grandma-Style Sweet Potato Casserole

Ingredients:

  • 5 tablespoons brown sugar
  • 2 cups all purpose flour
  • 7 tablespoons olive oil-butter blend
  • 1 cup oatmeal
  • ½ cup whole pecans
  • 1 cup peeled and diced apples
  • 3 pinches of cinnamon
  • 3 cups diced sweet potatoes
  • 1 cinnamon, stick
  • 2 tablespoons honey
  • salt to taste
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla extract

Directions: 

  1. Preheat your oven to 350 degrees. In a bowl, mix all purpose flour, 2 tablespoons sugar, and 4 tablespoons of the olive oil-butter blend.
  2. Add in the oatmeal, pecans, apples, and 3 pinches of cinnamon. Mix well.
  3. Pour the mix evenly over a baking sheet. Bake for 10 minutes in an oven at 350 degrees.
  4. Boil water in a pot over high heat and add the sweet potatoes and cinnamon stick. Boil for 30 minutes.
  5. Drain and add the sweet potatoes to the bowl. Discard the cinnamon stick.
  6. Add the remaining brown sugar, olive oil-butter blend, salt, honey, cinnamon, and vanilla extract, and mix together to a creamy consistency.
  7. Add the sweet potato mixture to a medium cast iron skillet and top with the pecan apple oatmeal streusel to serve.
