Garlicky Collard Greens

  • 2 tablespoons olive oil
  • 1/2 cup minced garlic
  • 2 bunches collard greens, stemmed and cut into 2-inch strips
  • 1 large onion, thinly sliced
  • 2 tablespoons tamari
  • sea salt, for seasoning
  • freshly ground black pepper, for seasoning


  1. Heat oil in a large, heavy skillet over medium heat. Add garlic and sauté just until fragrant, about 30 seconds. Add the greens and onions and sauté until greens wilt and become tender, about 8 minutes. Remove from the heat. Stir in the tamari. Season the greens to taste with salt and pepper.
  2. Transfer the greens to a bowl and serve.
