Granola Bars

Ingredients

  • 1/2 cup almond butter
  • 1 cup rolled oats or quinoa flakes
  • 1 banana, mashed
  • 1/2 cup walnuts, coarsely chopped
  • 1/3 cup date paste (or other dried fruit paste)
  • 2 tablespoons sunflower seeds
  • 2 tablespoons hemp seeds
  • 3/4 cup mixed chopped dried fruit (raisins, dried cherries, dried apricots, or any combination thereof)
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 teaspoon cinnamon

 

Directions

  1. Pre-heat oven to 350F. Line a 9 x 5-inch bread pan with parchment paper.
  2. Heat almond butter and banana and dried fruit on stove.
  3. Fold into banana mixture and press batter into prepared pan.
  4. Bake until set and lightly browned, about 20 to 25 minutes.
  5. Cool 10 minutes before cutting into bars, then cool completely before serving.
