RECIPE: Obsessed With McDonald’s Shamrock Shake? Try Our Healthier DIY Version

Every year around St. Patrick's Day, the infamous McDonald’s Shamrock Shake returns. While the green mint-vanilla milkshake has tons of fans, keep in mind that even the smallest size of this treat packs in 470 calories and 14g of fat and is mainly comprised of whole milk, sugar, cream, high-fructose corn syrup, and artificial flavors (check out McDonald's full nutrition facts here). We're not against a little indulging, but we've whipped up a healthier version than what’s available at the drive-through — and it's a cinch to make.

On Z Living’s popular food show Flip My Food With Chef Jeff, host chef Jeff Henderson creates healthier versions of popular American meals. In that spirit, we’ve reimagined Micky D's Shamrock Shake with more nutritious ingredients. Vegan ice cream replaces regular dairy ice cream, reducing fats and sugars, and natural replacements for peppermint extract and food coloring swap out artificial ingredients. 

Ingredients: 

  • 1 pint (2 cups) of vegan vanilla ice cream
  • 1 cup almond milk
  • Two handfuls of spinach (you'll use it to make a natural green food coloring)
  • ½ teaspoon of Taylor & Colledge Natural Peppermint Extract Paste
  • Coconut whipped cream (optional)
  • Dark chocolate shavings (optional)

Directions

  1. Make the spinach food coloring. Fill a saucepan with a couple handfuls of spinach, just enough water to submerge the leaves. Bring to a boil, and simmer for 15 minutes. Cool, then blend until completely smooth. Refrigerate at least 10 minutes. (BTW, trust us, you will not taste the spinach in your healthy shamrock shake. It's like an invisible green nutrient-booster!)
  2. Add vegan vanilla ice cream, almond milk, peppermint paste, and food coloring (start with two teaspoons, then add until reaching desired color) to a blender. Blend on high speed until smooth.
  3. Pour into glasses. Top with coconut whipped cream and dark chocolate shavings. Serve immediately.
