This deep red root vegetable is said to be excellent for stamina, blood pressure and brain health. If your kids are fussy eaters, give them beetroot in the form of a delicious smoothie.
- Wash the beetroot thoroughly. Boil until tender, and peel the skin.
- Blend it with pineapple and some water in a food processor. Use very little water if you want a thick, wholesome smoothie.
- Add some lime juice to it, just before serving. Mix well.
- Garnish with mint leaves if desired.
