Anti-Inflammatory Curried Quinoa Salad

    Ingredients

    Salad:

    • 3 cups cooked quinoa
    • 1/2 cup raisins
    • 1/2 cup dried apricots, chopped
    • 1/3 cup sliced green onions
    • 1/3 cup toasted pumpkin or sunflower seeds
    • 1/4 cup cilantro leaves

    Dressing:

    • 1 tablespoon curry powder
    • 2 tablespoons chopped cilantro
    • 3 tablespoons extra virgin olive oil or avocado oil
    • 2 tablespoons apple cider vinegar

    Directions
    Mix all ingredients together in a salad bowl.
