Creamy Coconut Rice Pudding


    There’s nothing quite as satisfying as tucking into a bowl of rice pudding. This vegan recipe gives you the sweet without the sugar, and creaminess without the butter.


    • 2 cups cooked brown rice
    • 2/3 cup coconut milk
    • 1/2 cup almond milk
    • 3 tablespoons shredded dried coconut
    • 1/3 cup maple syrup (100% maple syrup)
    • 1/2 teaspoon cinnamon


    • Combine all ingredients in a pot, and cook on a medium high flame top of the stove until creamy, about 7-10 minutes. Serve immediately.
