Double Cherry Almond Muffin



    • 1 tablespoon ground chia
    • 4 tablespoons water
    • 1 ripe banana
    • 2 tablespoons coconut oil
    • 1/2 cup walnut butter (or almond butter)
    • 1 teaspoon vanilla extract
    • 1 teaspoon almond extract
    • 1 cup almond milk
    • 1/2 cup coconut sugar
    • 1 cup brown rice flour
    • 1 cup oatmeal
    • 3 tablespoons maca powder
    • 1 teaspoon baking powder
    • 1 teaspoon non-aluminum baking soda
    • 1/2 teaspoon salt
    • 1/2 cup slivered almonds
    • 1/2 cup dried cherries

    Cherry Cashew Cream:

    • Almond extract
    • 2 cups raw cashews
    • Coconut nectar
    • 2 cups pitted cherries
    • Coconut milk or almond milk


    1. Place ground chia in a small bowl. Add warm water and mix with a fork. Set aside for gel to form.
    2. Mash banana in large bowl. Add oil, nut butter, vanilla and milk and stir to mix.
    3. Add the rest of the ingredients and mix until well incorporated.
    4. Grease large muffin tins with coconut oil.
    5. Drop in batter and bake at 350°F for 25 to 30 minutes, until toothpick comes out clean.
