Ingredients
- 3 large ripe bananas
- 1 cups fresh strawberries
- 1 cup fresh raspberries
- 1 cups quinoa flakes
- 1 cup cooked quinoa
- 1 cup shredded, unsweetened coconut
- 1 cup brown rice flour
- 1/3 cup coconut sugar
- 1 1/2 tablespoons ground chia seeds
- 2 tablespoons hemp seeds
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- Pinch sea salt
Directions
- Pre-heat oven to 375°F. Blend bananas and strawberries in food processor until smooth.
- Add to bowl and stir in remaining ingredients.
- Drop into large rounds on cookie sheet lined with parchment paper (or greased with coconut oil).
- Bake for 30 to 35 minutes, or until cookies are browned on the bottom and hold together.
