Ingredients:
- 1 cup Silk soymilk, almondmilk, coconutmilk or Almond Coconut Blend
- 1 1/2 cups oatmeal, divided (quick or old-fashioned)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 2 eggs, beaten
- 1 container Silk Vanilla Soy Fruity & Creamy
- 1/2 cup fresh or frozen blueberries, raspberries or sliced bananas
Directions:
Bring Silk to a simmer in a saucepan over medium heat. Remove from heat and add 3/4 cup oatmeal.
Stir and let sit for 10 minutes.Meanwhile, grind remaining 3/4 cup oats in a blender or processor until fine.
Combine ground oats, baking powder and cinnamon in a bowl.
Add Silk mixture, eggs and Fruity & Creamy, mixing to combine.
Note: If batter is too thick to pour, thin it out with additional Silk.
Fold in fruit.
Pour by 1/4 cup onto hot griddle. Cook until nicely browned on each side.
Serve with maple syrup, fresh fruit or additional Fruity & Creamy.
