Mango Avocado Ceviche

    Ingredients:

    • 1 filet of sushi-grade flaky white fish, diced into small cubes.
    • 1/2 red onion, chopped
    • 1/2 jalapeno chopped
    • 4 limes
    • 2 tbsp orange juice
    • 2 tbsp pineapple juice
    • 2 tsp salt
    • 1 avocado, chopped
    • 1 mango, chopped
    • ½ cup cilantro, chopped
    • Plantain chips or tortilla chips

    Directions:

    1. Mix all ingredients together, except avocado, mango & cilantro.  Let marinade for an hour.
    2. Once marinated, mix in avocado, mango & cilantro.
    3. Serve immediately with plantain chips or tortilla chips
