Red Beans And Rice



    • 1 cup dried red beans, soaked overnight
    • 3 cups water
    • 2 bay leaves
    • 1-2 tablespoons olive oil
    • 1 large onion, peeled and diced
    • 2 cloves garlic, peeled and minced
    • 1 tomato, diced
    • 1 1/2 teaspoon cumin
    • 1 teaspoon coriander
    • 1/2 – 1 1/2 teaspoons habanero sauce or hot sauce
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon sea salt
    • 1/4 cup fresh parsley, minced
    • 2 cups cooked long-grain brown rice (see recipe)


    1. After soaking the beans overnight, discard bean soaking water.
    2. Bring beans, fresh water and bay leaves to boil.
    3. Reduce heat to medium low, cover and cook for about 45 minutes, then test for doneness. If necessary, continue cooking till beans are tender but not mushy.
    4. In a separate pan, sauté onion, and garlic on low heat for about 5 minutes.
    5. Add tomato, cumin, coriander, habanero sauce, black pepper, salt and cooked beans to the sauté and continue cooking for 30 minutes.
    6. Serve with long-grain brown rice and garnish with parsley.
