Vegetable Soup Recipe: Potato-Onion Soup

    This healthy potato soup helps kill the harmful bacteria in your mouth, and makes for a hearty, satisfying fall meal.

    Ingredients:

    • 3 medium potatoes
    • 1 medium onion
    • 3 tablespoons canola oil
    • 1 tablespoon butter
    • 1/4 cup tomato puree
    • 2 tablespoons lemon juice
    • 1/2 teaspoon red chili powder
    • 1/2 teaspoon black pepper
    • 1 tablespoon corn flour
    • 2 cups water
    • 1 tablespoon coriander leaves
    • Salt (to taste)

    Preparation:
    Cut peeled potatoes and onion into chunks and wash thoroughly. Cook with canola oil over medium heat until tender. Remove from heat and set aside to cool. Puree the potato-onion mixture in a blender, and then blend in the tomato puree.

    Heat butter in separate pan. Season with chili powder, pepper and salt. Add in the puree and lemon juice and bring everything to a boil. Slowly add corn flour (dissolved in water), stirring the whole time, and cook over a low flame until the soup thickens. Garnish with finely chopped coriander. Serve warm.
