Watermelon-Cucumber Salad



    • 1 English cucumber, cut into 1/2 inch cubes
    • 1/2 small seedless watermelon, cut into 1-inch chunks (about 4 cups)
    • 1 to 2 tablespoons extra virgin olive oil
    • 1 big bushy sprig of mint, leaves only
    • 1/4 cup toasted pine nuts
    • 1/2 teaspoon dried oregano
    • Sea salt and freshly ground pepper


    • Toss all ingredients together in a large serving bowl until well blended.
