Rice Pilaf Recipe (with Apricots and Almonds)

    This fragrant rice pilaf recipe is the perfect accompaniment to a variety of dishes. In fact, it’s so delicious, that we often enjoy the rice as a standalone vegetarian dish for lunch or dinner.

    Sweet, dried apricots and unsalted almonds are mixed into this rice pilaf for extra flavor and texture. They add interest and beautiful color to the dish.

    You can choose to cook your rice in water or chicken stock; either option will work. It’s important to note that if you use a different kind of rice than the one outlined below, you will need to adjust the liquid measurements accordingly. Different types of rice require different amounts of liquid. Most rice packages will offer this information on the label.

    1. To a saucepan, add the butter and melt over medium heat. Add in the onion and sauté until translucent.
    2. Stir the dried rice into the pot for a minute. Add the salt, dried apricots, and almonds. Give everything a stir.
    3. Pour in the water or chicken stock, cover the saucepan, and cook for approximately 15 to 20 minutes, until the rice is tender and the liquid is gone.
