Split green gram, also called mung daal or moong dal in India, is a fantastic vegetarian source of protein. At 100 calories per half cup, it is low-calorie, high in fiber, and full of B vitamins.
You could boil and have mung daal as is, or prepare this simple Sattvic recipe to enjoy the lentil.
- 1 cup mung daal (split green gram)
- 1 cup buttermilk (1 part yogurt and 2 parts water, blended until smooth)
- 1 cup doodhi, grated (bottle gourd)
- Cilantro leaves
- ¼tsp turmeric powder
- ½tsp lemon juice
- ¼tsp hing (asafoetida)
- 1tsp vegetable oil
- Salt to taste
- Soak the mung daal in some water for 5 hours. Grind it in a blender until smooth.
- Add the buttermilk, doodhi, turmeric, lemon, hing, salt, cilantro leaves, and mix well with a spoon.
- If the mixture is too thick, add some more buttermilk.
- Set aside for 1 hour.
- Grease a pan and spread 1tsp of the mixture in the middle of the pan, as you’d make a pancake.
- Cook both sides of the pancake until lightly browned.
- Serve hot with green chutney (a spicy mix of cilantro and green chillies).
