Full of vitamins and fiber, squash is an excellent addition to your diet. It comes in two main varieties, summer and winter squash. Make the most of the seasonal produce, and prepare this as a Vegan/vegetarian option for your backyard barbecue.


  • 1 yellow summer squash, cut into long, thin strips
  • Olive oil
  • Sea salt
  • Freshly ground black pepper


  1. Lightly coat squash with olive oil and season with sea salt and black pepper.
  2. Cook on the grill 4-5 minutes until you can see dark grill marks on the surface of the squash.
  3. Repeat on the opposite side.
