This time of the year is all about pumpkins and candy, but you still need to get your kids to eat their vegetables and get their daily dose of nutrition, without them throwing a tantrum or making a fuss.
Here’s a novel way to have some fun and do all of the above without breaking the bank or breaking into a sweat.
Just scoop out a pumpkin and carve the eyes and mouth like you would to make a Jack O’Lantern for your Halloween-themed décor. Prepare some queso and some guac, both healthy dishes that are simple to make and quick to prepare.
Place the queso in a bowl that sits on the top of the pumpkin, and spread the guac to look like it’s being spewed by the pumpkin head. Arrange some wholegrain crackers, zucchini chips or vegan nachos around the pumpkin head and serve. Prepare to watch the kids go crazy dipping into the pumpkin’s cheesy ‘brains’ and scooping up the ‘barf-y’ guac.
