Ayurvedic practitioners take certain oils, such as sesame oil, and infuse them with herbs that have a specific medicinal value.  Over the centuries, natural oils have been found to be of tremendous benefit to the body, for they have a nourishing, rejuvenating property.

If you felt dried up and dehydrated and were to rub water on your skin, would the skin absorb it and provide you with hydration?  Of course not.  You would have to drink the water to enjoy its benefit.  In contrast, oil can very much be absorbed by the skin, and when this happens the body enjoys its therapeutic qualities. Different oils are used for different forms of treatment, such as using bhringaraj oil for the health of the hair and using sahacharadi for back pain.
