- 1 English cucumber, cut into 1/2 inch cubes
- 1/2 small seedless watermelon, cut into 1-inch chunks (about 4 cups)
- 1 to 2 tablespoons extra virgin olive oil
- 1 big bushy sprig of mint, leaves only
- 1/4 cup toasted pine nuts
- 1/2 teaspoon dried oregano
- Sea salt and freshly ground pepper
- Toss all ingredients together in a large serving bowl until well blended.
