A lassi is a cooling drink prepared in India: a mix of protein-rich yogurt and water, either sweetened with sugar and cardamom or spiced up with cumin and/or minced ginger. One of our favorite variations of this beverage is an apricot lassi.
Apricot is loaded with numerous health benefits as it is rich in fiber, vitamin A, and potassium. The trick to getting an awesome flavor in this apricot lassi is to use fresh and juicy apricots rather than dried ones.
The fresh apricots are naturally sweet and, paired with the maple syrup in this recipe, contribute to a tasty lassi to sip on. If you want to make a healthier version of this apricot lassi, skip the maple syrup and enjoy the natural sweetness of apricots.
