Which kid doesn’t love a banana split? Topped with ice cream, chocolate syrup, and a sweet cherry, there’s a reason children (and adults) love this dessert. To make this dessert a fulfilling and tasty breakfast rather than a special occasion treat, we gave it a healthy makeover and created this breakfast banana split recipe.
Like a classic banana split, this recipe starts off with a banana split down the middle to create two halves. Instead of topping the banana slices with ice cream, however, we use Greek yogurt.
Not only is this a healthier swap because of the reduced sugar content, but the banana split gets a hefty dose of protein that it lacked before. We also add a drizzle of peanut butter to this breakfast banana split to reinforce the protein content of this dish.
What you add to the banana after that is truly up to you and what kind of nutritional content you’re looking to get out of your meal. If you want more protein, add hemp hearts. If you want antioxidants, add fresh berries like we do.
To add crunch to this breakfast banana split, feel free to add granola, chopped nuts, seeds, or quinoa crispies. The possibilities are endless and each one is bound to come with its own added health benefits.
