To make this a vegan butternut squash soup recipe, you’ll want to swap out the chicken stock for vegetable stock and use vegan cream cheese instead of regular cream cheese.

    Once the squash has cooked, the contents of this soup are blended into a purée, which is one of the reasons we love this soup. The creamy texture of this butternut squash soup is absolute heaven. Pair the soup with a garlic crostini and you’re bound to have a scrumptious fall meal.

    1. Preheat the oven to 350°F.
    2. Lay out the cut butternut squash onto a baking sheet and drizzle with 1 tablespoon olive oil. Season the squash with a pinch of salt and pepper.
    3. Bake the squash for 15 minutes or until the squash is tender.
    4. To a pot, add the remaining tablespoon of oil and the diced onion. Cook over medium heat until the onion is translucent. Add the baked squash and chicken stock to the pot.
    5. Bring the contents of the pot to a boil, then reduce to a simmer and cook for approximately 15 minutes.
    6. Either using an immersion blender or a food processor, purée the contents of the pot until they're smooth. Add in the cream cheese and another pinch of salt and pepper, then purée until smooth.
