Ingredients
- 3 large butternut squash peeled, seeds removed, and cut into cubes
- 2 tbsp olive oil divided
- 1 large onion coarsely diced
- 1 quart chicken stock
- 2 oz cream cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F.
- Lay out the cut butternut squash onto a baking sheet and drizzle with 1 tablespoon olive oil. Season the squash with a pinch of salt and pepper.
- Bake the squash for 15 minutes or until the squash is tender.
- To a pot, add the remaining tablespoon of oil and the diced onion. Cook over medium heat until the onion is translucent. Add the baked squash and chicken stock to the pot.
- Bring the contents of the pot to a boil, then reduce to a simmer and cook for approximately 15 minutes.
- Either using an immersion blender or a food processor, purée the contents of the pot until they're smooth. Add in the cream cheese and another pinch of salt and pepper, then purée until smooth.
