Fresh vegetables like carrots form an important part of the yogic diet. They’re also rich in necessary nutrients like carotenoids, which promote eye health and other vital organs. This carrot recipe is an ode to the traditional French recipe for Vichy carrots, and is a delicious way to include this beneficial vegetable in your diet.

While carrots are best eaten in raw form, this particular recipe cooks them ever so slightly to soften and bring out the natural sweetness of carrots. These Vichy carrots pair particularly well with roast chicken or baked fish.
