    The difference between this cheesy cauliflower bake recipe and a bowl of mac and cheese, however, is that the cauliflower bake is still a somewhat low-carb, healthy option to bundle up with.

    Made with mashed cauliflower, this gluten-free dish is creamy and hearty, plus it comes with all of your favorite fixings. Topped with sharp cheddar cheese, turkey bacon, and green onions, it’s hard not to go crazy for the irresistible flavor of this low-carb cauliflower bake.

    If you’ve never made mashed cauliflower, the process is really simple. You’ll want to cook your cauliflower florets in a pot of boiling water until they’re tender. After that, they’re transferred to a food processor or blender and processed until they’re creamy and smooth.

    The cauliflower is then topped with cheese, crumbled bacon, and the green onions, and set inside the oven to bake until the cheese has melted. This healthy cauliflower bake would be absolutely delicious next to a side of oven baked chicken for a fall dinner.

    Instructions

    1. Preheat the oven to 350°F. Bring a large pot of water to a boil. Meanwhile, break up the cauliflower into florets. Once the water is boiling, add the cauliflower florets and cook for about 20 minutes or until the cauliflower is tender.
    2. To a food processor, add the cauliflower florets, garlic, almond milk, vegetable oil spread, and salt. Process until the cauliflower is smooth and creamy. Scoop the creamy mixture into a casserole dish.
    3. Place the turkey bacon on a microwave-safe plate and cook the bacon for about 2 minutes. Flip the bacon over and cook for another minute or until the bacon is crispy.
    4. Top the cauliflower with the grated cheese and green onions. Crumble the turkey bacon on top too.
    5. Bake the cauliflower to about 10 minutes or until the cheese has melted and is bubbling. Serve warm.
