Ingredients
- 1 head of cauliflower cut into florets
- 2/3 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp sea salt
- 1/4 tsp Black pepper
- 1/3 cup onion finely diced
- 1/3 cup celery finely diced
- 2 large eggs hard-boiled and chopped
- Chives for garnish (optional)
Instructions
- Bring a large pot of water to a boil then add a tablespoon of salt. Add cauliflower and cook until cauliflower is tender, about 5 minutes. Drain and pat-dry with a paper towel, then transfer florets to a large bowl. Temporarily set aside.
- In a separate bowl, whisk the mayonnaise, apple cider vinegar, Dijon, garlic powder, paprika, salt and pepper until well-combined and smooth.
- Pour the dressing over the cauliflower florets, then add the onion, celery, and eggs. Stir to combine, then garnish the salad with the chives.
