    1. Bring a large pot of water to a boil then add a tablespoon of salt. Add cauliflower and cook until cauliflower is tender, about 5 minutes. Drain and pat-dry with a paper towel, then transfer florets to a large bowl. Temporarily set aside.
    2. In a separate bowl, whisk the mayonnaise, apple cider vinegar, Dijon, garlic powder, paprika, salt and pepper until well-combined and smooth.
    3. Pour the dressing over the cauliflower florets, then add the onion, celery, and eggs. Stir to combine, then garnish the salad with the chives.
