Ingredients
- 2 tbsp fresh lime juice
- 1 tbsp brown sugar
- 3 tbsp rice wine vinegar
- 4 cloves garlic finely minced, divided
- 1 tbsp fresh ground ginger
- 1/8 cup thinly sliced scallions
- 1 tbsp sesame oil
- 3 tbsp extra-virgin olive oil divided
- 1 lb skinless boneless chicken breast, cut into small pieces
- 1/2 cup diced red onion
- 8 cups zucchini pasta
- 1/8 cup sunflower seeds
- 2 tbsp fresh basil
- 1/2 tsp lime zest
Instructions
- To a small bowl, add the lime juice, brown sugar, rice vinegar, half the minced garlic, fresh ginger, and scallions. Stir together to combine; temporarily set aside.
- In a medium skillet, warm one tablespoon of the olive oil over medium-high heat. Add the chicken, red onion and the remaining minced garlic. Cook the chicken for about 8 minutes, or until the chicken is no longer pink. Transfer the cooked chicken to a plate.
- To the skillet, add the remaining olive oil and sesame oil, as well as the zucchini pasta. Stir-fry for about 2 minutes. Pour in the lime and ginger sauce and toss to combine.
- Plate the zucchini pasta, then add the cooked chicken on top.
- Combine the sunflower seeds, basil, and lime zest in a bowl and sprinkle on pad thai.
