    To create this chicken pad thai recipe, we use spiralized zucchini as the pasta or noodle base for this meal. If you’ve never had spiralized zucchini, be open-minded to it as you’ll probably be surprised just how much you like this gluten-free substitute.

    You can make your own spiralized zucchini with a spiralizer or you can buy fresh “zoodles,” as they’re sometimes referred to at your local natural foods store.

    The resulting chicken pad thai dish will have fantastic flavor, while also being a low-fat and low-calorie meal.

    1. To a small bowl, add the lime juice, brown sugar, rice vinegar, half the minced garlic, fresh ginger, and scallions. Stir together to combine; temporarily set aside.
    2. In a medium skillet, warm one tablespoon of the olive oil over medium-high heat. Add the chicken, red onion and the remaining minced garlic. Cook the chicken for about 8 minutes, or until the chicken is no longer pink. Transfer the cooked chicken to a plate.
    3. To the skillet, add the remaining olive oil and sesame oil, as well as the zucchini pasta. Stir-fry for about 2 minutes. Pour in the lime and ginger sauce and toss to combine.
    4. Plate the zucchini pasta, then add the cooked chicken on top.
    5. Combine the sunflower seeds, basil, and lime zest in a bowl and sprinkle on pad thai.
