Cloud Bread Recipe for the Keto Diet

    This cloud bread recipe is the keto-friendly option for indulging in fluffy bread without exceeding your carb count for the day. Made primarily of eggs, cloud bread utilizes the volume of whipped egg whites to create the structure and puffy appearance of bread.

    The egg yolks are mixed with cream cheese to provide substance to the bread and provide the chewy mouthfeel. While cloud bread does carry an eggy flavor, it still holds up as an excellent bread-like option for burgers, sandwiches, and other recipes that call for the use of bread.

    The key to successfully executing this cloud bread recipe is actually three-fold. The first thing you want to make sure you’re doing is beating your egg whites well. The egg whites should be beaten until they’re stiff and clear peaks form. You should be able to hold your whisk upside down with the egg whites slipping off.

    You also want to make sure you bake your cloud bread well. Cloud bread should in no way be moist like a baked omelet might be. The cloud bread should be very dry once it’s baked.

    The last step to a well-made cloud bread is to allow the cloud bread to cool completely. Place the cloud bread on a wire cooling rack for at least an hour. As the cloud bread cools, its texture will improve and it will have a better chance of holding up under any moist sandwich or burger fillings.

    1. Preheat the oven to 300°F. Prepare a baking sheet by lining it with a piece of parchment paper or a silicone mat.
    2. Separate the egg yolks from the whites. Pour the whites into a large, clean bowl. Add the cream of tartar to the whites and whisk on high speed until the egg whites are stiff and distinct peaks form.
    3. In a separate, large bowl, beat the yolks with the cream cheese. Mix until smooth and creamy.
    4. Use a rubber spatula to very gently fold in half of the egg whites into the cream cheese mixture. Once combined, gently fold in the remaining half of whites.
    5. Scoop 6 mounds of the batter onto your baking sheet, spaced out from each other. Smooth the mounds out until they're each about 1/2" thick.
    6. Bake the cloud bread for 30 minutes until lightly browned. Transfer to a wire cooling rack to cool for at least 60 minutes. Once cooled, store in an airtight container in the fridge until ready to use.
