Coconut Date Balls Recipe

    These coconut date balls are a healthy and tasty snack to munch on when you’re craving something sweet. Naturally sweetened through the use of dates, you’ll love how delicious and easy these coconut date balls are to create.

    To make this coconut date balls recipe, you’ll need a food processor or blender to not only chop your pecans but to purée your pitted dates as well.

    The dates and pecans are then stirred together with some vanilla extract and shredded coconut to create a type of “dough” or paste that can be formed into truffles a.k.a. balls.

    The coconut date balls are then refrigerated for an hour or two to set so that they stay nicely intact when you want to grab one and take a bite out of it. Once the balls have set, we like placing them in an airtight container in the fridge to snack on throughout the week.

    Similar to our peanut butter energy balls, this recipe is sweet, nutty, and absolutely irresistible. Because they’re also healthy, you won’t feel bad about indulging in more than one!

    Instructions

    1. In a food processor or blender, pulse pecans until finely chopped. Set aside in a bowl.
    2. Remove pits from dates and purée in the blender or food processor with vanilla extract.
    3. Combine dates, nuts, and 1 tbsp coconut.
    4. Roll into small balls and coat with shredded coconut. Put inside the refrigerator for 1-2 hours to set.
