Healthy Coconut Macaroons Recipe

    These healthy coconut macaroons recipe, not to be confused with French macarons, is a delightful treat to turn to when your sweet tooth hits but you don’t want to give up on your journey of healthy eating.

    Chewy coconut macaroons like these are a dream come true for coconut lovers like us. While these kind of coconut macaroon cookies are typically an indulgent treat, we used some clean eating swaps to make these coconut cookies much healthier than the original.

    Traditionally, coconut macaroons are made with condensed milk, which is high in sugar and fat. To make these healthy coconut macaroons, we used unsweetened coconut milk, brown rice syrup, and arrowroot powder to obtain the same flavor and consistency.

    These coconut macaroons are whipped up in a saucepan, then dropped onto a baking sheet in round mounds. They’re baked until golden and crisp on the exterior. When you bite into one, you’ll love the chewy, irresistible nature of these delicious cookies.

    1. Preheat the oven to 350°F. Line a baking sheet with a sheet of parchment paper.
    2. Add the coconut milk, rice syrup, and arrowroot to a saucepan over low heat. Stir together until thick; about 2 to 3 minutes.
    3. To the saucepan, add the vanilla, salt, and shredded coconut. Stir everything until it's all combined.
    4. Use a spoon to drop rounded mounds of the mixture onto your prepared baking sheet. Bake for 20 to 25 minutes until they're golden brown.
