Easy Pasta Salad Recipe with Sun-Dried Tomato Dressing

    1. Fill a large pot of water and bring to a boil. Add a tablespoon of salt to the pasta plus a drizzle of olive oil. Add the dry pasta in and boil according to the directions on the package. Drain the pasta and allow the pasta to cool.
    2. Once the pasta has cooled, transfer the pasta to a large bowl and add the diced tomatoes, olives, feta, and sun-dried tomatoes.
    3. To create the dressing, add the sun-dried tomatoes, red wine vinegar, olive oil, garlic, capers, salt, and pepper to the bowl of a food processor. Blend until smooth.
    4. Pour the pasta salad dressing all over the ingredients in your bowl, then add the Parmesan and fresh basil. Toss well to combine. Cover with a sheet of plastic wrap and refrigerate until cold.
