Making Chinese egg drop soup only requires a handful of simple ingredients. To create a vegetarian egg drop soup, you’ll need vegetable stock. Otherwise, you can simply use chicken stock.
You can also make an egg drop soup with corn, though this is totally optional. We love the addition of corn kernels in this warm and tasty soup. We also like to use cornstarch in our egg drop soup to help thicken the soup.
To make egg drop soup the soup that it is, it’s imperative to use eggs. When making this soup, you’ll want to bring your stock to a simmer. Once it’s simmering, you’ll whisk the stock to create a “whirlpool” effect, at which point you’ll gradually drizzle in the raw eggs as you whisk the stock in the saucepan.
The resulting effect includes those delicious egg ribbons you see in a classic egg drop soup recipe. The entire recipe can be prepared in less than 20 minutes, making this a fantastic meal for any night of the week.
