    To make these strawberry energy balls, we’re using fresh strawberries for their pretty pink hue and fruity strawberry flavor. The sweetness of these energy balls, however, comes from the dates that are used in the recipe.

    These energy balls with dates provide a nice boost of energy and natural sweetness plus plenty of great nutrients like fiber and minerals, in comparison to using white sugar. The dates also have a sticky quality that helps bind the ingredients together.

    While this energy balls recipe differs from our protein balls in that they lack the protein and peanut butter that recipe contains, both types of treats offer their own set of health benefits and energy-promoting qualities.

    This healthy energy balls recipe is also vegan-friendly and comes together quickly with a food processor. There are just five ingredients that are required and, after a brief time spent chilling in the fridge, these strawberry energy balls are ready to be snacked on!

    1. To a food processor, add the dates, strawberries, almonds, and rolled oats. Pulse until the almonds have been broken up into tiny pieces but not fully ground. The mixture should look paste-like in consistency.
    2. Scoop the mixture out of the food processor and form approximately 13 balls out of this mixture. Place the balls on a baking sheet covered in wax paper or parchment paper. Chill in the fridge for 30 minutes.
    3. After the energy balls have chilled, fill a shallow bowl with the shredded coconut flakes. Roll the balls in the coconut flakes, then enjoy or store in the fridge for up to one week.
