Ingredients
- 12-16 small fingerling potatoes cut in half vertically
- olive oil to drizzle on top
- 1 tbsp Fresh rosemary minced
- Sea salt and freshly ground pepper to taste
Instructions
- Preheat the oven to 400°F. Place all the cut potatoes onto a dark nonstick baking sheet. Drizzle the potatoes with olive oil, then gently toss to make sure they're all covered in oil.
- Sprinkle the minced rosemary along with a pinch of salt and pepper all over the potatoes.
- Bake the potatoes for approximately 40 minutes, or until they're fork-tender, crisp on the exterior, and browned.
