Fingerling Potatoes Recipe

    Whether you’re making baked salmon for dinner or some pesto chicken, this crispy roasted fingerling potatoes recipe is an excellent side dish to pair it with.     We prefer cooking fingerling potatoes in the oven because of the ease and convenience of doing so. When you use a dark coated baking sheet in a hot oven (400°F), you get fingerling potatoes that have superior texture compared to potatoes that have simply been baked or boiled.

    Unlike baked fingerling potatoes, which usually cook at a lower temperature, these oven roasted fingerling potatoes are extra crispy and delicious. We also like to make these roasted fingerling potatoes with rosemary and olive oil for the lovely aroma and flavor they provide.

    The best part about making fingerling potatoes is that it’s a recipe you don’t really need to prep for or set aside a tremendous amount of time for. Simply drizzle olive oil over the potatoes and garnish them with rosemary and seasoning, then roast them in the oven for about 40 minutes until brown and crispy.     1. Preheat the oven to 400°F. Place all the cut potatoes onto a dark nonstick baking sheet. Drizzle the potatoes with olive oil, then gently toss to make sure they're all covered in oil.
    2. Sprinkle the minced rosemary along with a pinch of salt and pepper all over the potatoes.
    3. Bake the potatoes for approximately 40 minutes, or until they're fork-tender, crisp on the exterior, and browned.
