- 1/4 cup lime juice
- 1/3 cup low-sodium soy sauce
- 1 tbsp extra-virgin olive oil
- 3 cloves garlic minced
- 1 piece fresh ginger peeled and minced
- 4 green onions thinly sliced
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Freshly ground black pepper
- For the chicken:
- 1 1/2 lb bone-in chicken drumsticks and thighs
- Lime slices for serving
- Sliced green onions for garnish
Instructions
- In a large bowl, combine all the marinade ingredients together with a whisk.
- Place the chicken pieces in a large ziplock bag and pour marinade all over the chicken. Zip the bag shut then give the bag a shake to get the chicken well-coated in the marinade. Refrigerate the chicken for at least 30 minutes.
