Kale Pasta Recipe

    Most of us can’t deny just how much we love pasta and its comforting nature. This kale pasta is a creative way to enjoy your go-to comfort food with the addition of greens and a lightened up cream sauce.

    This kale pasta recipe is comforting yet healthy, easy to prepare and a sure winner at dinner parties. Note that you can use whatever type of pasta you’d like, including fusilli, penne, spaghetti, or fettuccini.

    You can also opt for a less spicy sausage, but we think the little bit of heat from the sausage adds a little something-something to the dish. We also recommend using fresh Tuscan kale and have outlined how you should prepare the kale for the best results.

    Instructions

    1. Fill a large pot with water and bring to a boil over high heat. Once boiling, add a tablespoon of salt and the pasta. Cook the pasta per the package instructions. Reserve 1/2 a cup of the pasta water. Drain and set aside.
    2. In a large pan, cook the sausage until it turns brown. Add the 1/2 cup of pasta water and the half and half and simmer over low heat. Stir occasionally, until the cream and water have reduced to half the amount they were.
    3. Meanwhile, prepare the kale by rinsing the leaves them removing the stems from the leaves. Bunch the kale leaves together and cut them into fine shreds. Add the kale to the spaghetti sauce and cook until the leaves become soft.
    4. Remove from the sauce from the heat and add the pasta. Add the grated parmesan cheese, then toss everything together to combine.
