    This Mexican rice recipe is also one of those recipes that you can whip up with pretty much any veggie you have lying around in your fridge or pantry. We love using last night’s brown rice to make use of leftovers (plus it makes this dish even quicker), but any kind of rice will do.

    The rice gets tossed with canned corn, fresh diced tomatoes, diced scallion, canned black beans, lime juice, fresh cilantro, and a pinch of salt. The rice ends up looking colorful and tasting incredible.
