    If you’ve never had Mexican street corn before, get ready for the most delicious corn you’ll ever eat. Made with creamy garlic mayo, cotija cheese, and the perfect amount of spice, this Mexican street corn will change the way you view corn on the cob.

    Summer is a wonderful time to enjoy corn on the cob as corn kernels tend to be sweet and juicy. Grilled on the barbecue, corn is delicious and enjoyable, but dressed up with some Mexican flair? It becomes out of this world good.

    This Mexican street corn is dressed with an irresistible garlic mayo sauce before it’s topped with crumbled cotija cheese. Both provide mouthwatering taste and texture to the corn, while the chili powder at the end gives the corn a feisty kick.

    In fact, we find the chili powder the best part of this Mexican street corn, giving the corn some heat and an addictive quality that will make you want more and more of this summer dish!

    1. Preheat the oven to 350°F. Once ready, place the corn (in their husks) into the oven, placing them directly on the oven rack. Cook for 35 to 40 minutes until the corn is tender and can be easily pierced with a fork.
    2. In the meanwhile, whisk the mayonnaise and garlic powder together in a small bowl. When the corn is ready, peel back the husk and brush the corn with the garlic mayo.
    3. Roll the corn in the crumbled cheese, then sprinkle with cilantro and chili powder. Optional: squeeze fresh lime juice over the corn.
