- 1 tbsp ghee
- 2 cups whole mung beans soaked in 4 cups of water for at least 3 hours or overnight, then drained
- 12 cups water
- 1/2 tsp ground black pepper
- 1/2 tsp ground ginger
- 1/2 tsp ground cumin seed
- 1/4 tsp rock salt (plus more to taste)
- 1 tsp lime juice optional
- 2 tsp minced cilantro
Instructions
- Place a large pot on the stove over medium-high heat. Once hot, add the ghee and mung beans. Sauté the mung beans until they're lightly browned and fragrant.
- To the pot, add 12 cups water and boil until the mung beans are cooked and tender, typically about 30 to 40 minutes.
- To the pot, add the pepper, ginger, cumin, and salt. Use a potato masher to slightly mash the mung beans to obtain a porridge-like consistency.
- Optionally, add lime juice. Garnish the soup with the fresh cilantro and enjoy the soup while it's hot.
