Ingredients
- 4 medium boneless skinless chicken breasts cut into 1 inch pieces
- 1 cup all-purpose flour
- 3 large eggs
- 3 cups Panko breadcrumbs
- for the sauce:
- 1 tsp sesame oil
- 2 tsp olive oil
- 1 tbsp minced garlic
- 1 tsp grated fresh ginger
- 1/4 cup hoisin sauce
- 1 1/2 cups orange marmalade
- 2 tbsp low-sodium soy sauce
- 1 tsp crushed red pepper flakes optional
Instructions
- Preheat the oven to 450°F. Line a baking sheet with a piece of foil and then spray the foil with cooking spray.
- Place the chicken and flour in a large ziplock bag and seal shut. Shake the bag until the chicken is coated in the flour. Temporarily set aside.
- To a large shallow bowl, add the eggs and whisk them to break the yolks apart and combine them with the whites. To a second shallow bowl, add the panko crumbs.
- Dip each piece of floured chicken (shaking off excess flour first) into the egg then the panko crumbs. Transfer the dipped chicken to the prepared baking sheet.
- Bake the chicken for 20 to 25 minutes, flipping them over at the halfway mark. Bake until they're golden brown and cooked through.
- Meanwhile, set a small saucepan over medium-low heat. Add the sesame oil and olive oil to the saucepan. Once hot, add the garlic and ginger and sauté for a few minutes until they're beginning to brown.
- Add the hoisin sauce, orange marmalade, soy sauce, and red pepper flakes to the pan, stirring this mixture together. Cook for 3 to 5 minutes, until the mixture has thickened.
- Place the cooked chicken in a large bowl. Pour the orange sauce all over and gently toss to combine. Serve hot.
