These quinoa cookies are going to become a staple in your home for healthy chocolate chip cookies you’ll feel good about indulging in. Not only are these cookies gluten-free and vegan, but they’re also made with natural ingredients and plenty of protein and fiber.
While quinoa may sound like an unconventional ingredient to add into cookie dough, it actually works out really nicely. The quinoa flakes help pull the wet ingredients together into a dough while adding a hefty dose of protein to the mix.
For some natural sweetness, we use applesauce and erythritol to the cookie dough, giving the cookies the dessert taste we know and love.
You could try subbing in peanut butter chips for the chocolate chips for some more protein, or stirring in some chopped nuts and raisins too.

Ingredients
- 3/4 cup Quinoa Flakes
- 3/4 cup Quinoa Flour
- 1/2 cup Arrowroot Starch
- 2 tsp baking powder
- 1 cup unsweetened applesauce
- 1 tsp Pure Madagascar Bourbon Vanilla Extract
- 1/2 tsp Butter Emulsion optional
- 1/3 cup Granular Erythritol
- 1/2 cup Bittersweet Chocolate Chips
Instructions
- Preheat the oven to 375°F. In a large mixing bowl, combine all of the ingredients together using a wooden spoon to stir everything.
- Add 12 mounds of cookie dough onto a baking sheet lined with a sheet of parchment paper or a silicone mat.
- Bake the cookies for approximately 20 minutes, then let the cookies cool on the baking sheet for another 5 minutes.
