Cinnamon Roasted Sweet Potatoes Recipe

Instead of eating mashed sweet potatoes with butter and cream or frying the sweet potato in hot oil, these sweet potatoes are roasted in the oven with a minimal coating of coconut oil and maple syrup.

    The resulting roasted sweet potatoes are crispy on the edges but tender on the inside. The sprinkle of cinnamon that’s added to these sweet potatoes also enhances the sweetness of the potatoes and adds an irresistible fragrance.

    The overall dish takes about 10 minutes to prepare and 45 minutes to cook. You can easily pair these cinnamon roasted sweet potatoes with roast chicken for a delicious weeknight dinner, or showcase them on your Thanksgiving spread next to your turkey.

    1. Preheat the oven to 400°F. Line a baking sheet with a sheet of parchment paper; temporarily set aside.
    2. Add the chopped sweet potatoes to a large bowl. Drizzle the coconut oil and maple syrup over the potatoes then toss the sweet potatoes until they're coated in this mixture.
    3. Sprinkle the cinnamon and 1/2 a teaspoon of salt over the potatoes and stir everything together so that the potatoes are coated in this seasoning.
    4. Spread the sweet potatoes out over the prepared baking sheet then bake the potatoes for 40 to 50 minutes, until they're fork-tender.
    5. Remove the potatoes from the oven and sprinkle the remaining salt all over the potatoes. Serve warm.
