- 6 cups chopped and peeled sweet potatoes
- 1 tbsp coconut oil melted
- 1 tbsp maple syrup
- 2 tsp cinnamon
- 1 tsp salt
Instructions
- Preheat the oven to 400°F. Line a baking sheet with a sheet of parchment paper; temporarily set aside.
- Add the chopped sweet potatoes to a large bowl. Drizzle the coconut oil and maple syrup over the potatoes then toss the sweet potatoes until they're coated in this mixture.
- Sprinkle the cinnamon and 1/2 a teaspoon of salt over the potatoes and stir everything together so that the potatoes are coated in this seasoning.
- Spread the sweet potatoes out over the prepared baking sheet then bake the potatoes for 40 to 50 minutes, until they're fork-tender.
- Remove the potatoes from the oven and sprinkle the remaining salt all over the potatoes. Serve warm.
